If you don’t have a variable temp kettle, use boiling water 2min off the boil.

STEP 1

Fill kettle and set water temp to 200F

STEP 2

Weigh out 25g of coffee and place in hopper

STEP 3

Place the filter into the Chemex and pre-wet your filter with the hot water. This does a few things: it removes any paper-y taste from the filter, it sticks the filter to the sides of the Chemex, and it warms up the Chemex to keep heat loss from happening to your coffee.

STEP 4

Grind your coffee to a medium-fine grind (your coffee grounds should look a little finer than table salt)

STEP 5

Put one hand on the filter, holding it in the brewer, and pour out the water into the sink. Don’t forget this step!

STEP 6

Pour coffee into the pre-wet filter and give the Chemex a gentle shake to level the bed of coffee. Place your Chemex on the scale and zero it out.

STEP 7

0:00 | Immediately pick up your kettle, start your timer and pour in a slow circle onto the coffee grounds. Make sure to wet every part of the coffee bed. Stop pouring at 70g at around 20 seconds on the timer.

STEP 8

0:20 | Take a spoon and stir the coffee in a circle for 15 seconds. This process is called the bloom & stir, it allows your coffee to release any gas that was held in and kickstarts the extraction process and double checks that all the coffee will be evenly extracted. Put your spoon in your mug and wait for ten seconds before you start pouring more water.

STEP 9

0:45 | Start pouring water at 200F in the middle of your coffee and slowly work your way in concentric circles towards the edge of the brewer and back to the middle until you get to 350g on your scale. This should take about 30 seconds.

STEP 10

1:15 | Stir the coffee in five quick circles – you want it to create a small vortex. This will allow for even extraction through the rest of the brew process as the water seeps through the coffee bed pulling out the delicious dissolvable solids that make a cup of coffee taste so good.

STEP 11

3:00 – 3:30 | you should see the top of the bed of coffee peak through the surface of water. You desired goal here is for your bed of coffee to look like a little centered mountain. Once coffee stops dripping through the bottom of the filter, dispose of the filter. Give your Chemex a swirl and pour it out into your favorite mug.
