Aquila (The Eagle) represents boundlessness, freedom, a spirit that is not afraid. These adjectives also do well to describe Rodrigo Sanchez of Finca Monteblanco in the Huila region of Colombia. Rodrigo and his team have not only isolated a previously unknown variety of coffee (Pink Bourbon), but have also pioneered a new processing technique called "cold fermentation". Freshly harvested ripe cherries are depulped and transferred to a cold room to prolong fermentation to produce more complex flavor. After 2 years of experimentation, Rodrigo found the ideal temperature for balanced sweetness and complexity to be 10-13℃, and has prepared this micro-lot accordingly. Through innovation and a willingness to push the boundaries, Rodrigo and the team at Finca Monteblanco continue to soar to new heights.
