After selecting only the ripest coffee cherries, Danilo and his team place them in an oxygen-free environment for 200 hours to produce an intense transformation. This modern application of the ancient art of fermentation enhances flavor saturation and creates a complex, sweet, fruit-forward cup, that, like Taurus, simply cannot be ignored.
